
Sorry I haven’t written in a while. I have been stupid busy this past month. All you New Years Resolutioners really help out the fitness industry this time of year; the downside: I’m running out of time to keep up! I can’t complain though. I love my clients.
Here’s a new meal prep recipe to try out:
California Roll Sushi Bowls (w/ Cauliflour “Rice”)
Ingredients: TransOcean Crab meat (regular or imitation) 20oz | Chicken of the Sea – Red Salmon 14.75oz can | Kraft Philadelphia Jalapeno Cream Cheese Spread 7.5oz tub (can sub 8oz regular cream cheese) | Green Giant Cauliflour Rice 24oz bag | 2 Regular-sized Cucumbers | 2 – 3 Jalapenos | 4 Medium Avocados (optional) | Spicy Mayo | Sriracha | Low-sodium Soy Sauce (optional) | Green Onion (optional)
Makes 8 total meals. Prepped for my husband and I for lunches this week. Best served cold.
Directions: Cook cauliflour rice according to packaging, season lightly with garlic salt; set aside. Drain salmon and mix in 3.5 – 4oz of cream cheese and 4 tbsp of sriracha, set aside. Slice cucumber into thin-round or long slices, set aside. Wearing gloves, slice jalapeno into thin-round slices, set aside. Lastly, finely chop green onion for garnish.
Plate it (per serving):
- Cauliflour rice – 1 cup
- Crab meat – 1/2 cup
- Salmon – 1/4 cup
- Cucumber slices – 4 to 5
- Jalapeno slices – 4 to 5
- Spicy Mayo – 2 tbsp (drizzle on top)
- Avocado – 1/2 (sliced)
- Soy Sauce – 2 tbsp
- Green onion – as garnish
